| The following are a few special recipes I've picked up over the years, including a very rare recipe for sugar cookies, using no butter! If you've ever tried to find a sugar cookie recipe, either surfing online or looking in cookbooks, you will know just how hard these are to find. | |||||||||||||||||
| Sugar Cookies (no butter) | |||||||||||||||||
| Ingredients: 2 cups flour 2 teaspoons of baking powder 1/2 teaspoon salt 2 Large eggs 3/4 cup of sugar (plus addtional for topping) 2/3 cup of vegetable oil 2 teaspoons vanilla extract 1 teasoon grated lemon zest (or if you don't have, a teas of lemon juice will work) |

| Mix flour, baking powder and salt into a medium sized bowl. In separate bowl whisk the eggs for a few minutes until blended well. Add sugar, oil, vanilla extract and lemon zest. Stir the dry ingredients into the egg mixture until blended. Chill covered for 30 minutes or longer. Preheat oven to 400 degrees F. Drop the cookie dough by rounded teaspoonfuls 2 inches apart onto ungreased baking sheets. For additional sugar topping, mist the bottom of a 3 inch flat bottom glass with water and dip glass into additional sugar. Press the top of each cookie lightly with the glass to flatten. Mist the glass with water and dipping in sugar before pressing each cookie. Bake cookies until lightly browned about 8 mins. Cool on baking sheets for 2 mins. Remove to wire rack (or large flat plate) to completely cool. Thats it! Eat and enjoy them, they are just a good as sugar cookies baked with butter! |
