Pan fried loin of kangaroo served pink with Poached quandong pieces (Bush apricot) on a Chickpea and potao puree finished with a red wine and orange glaze.

Breast of chicken
Oven baked breast of chicken with a wild mushroom and pine nut filling set on a fresh herb butter sauce.

Bay snapper fillet
Grilled fillet of bay Snapper set on wok fried bean shoots and semi-dried tomatoes drizzled with a red capsicum dressing and crisp leeks.

Dessert

Cheese platter
A selection of Tasmanian and Victorian cheese served with Quince paste, nuts and water crackers.

Heart of berries
Shortbread hearts layered with vanilla bean pastry cream and selected fresh berries set on a sweet fruit coulis.
