Potato Salad

You will need:
Small Potatoes         250 grms
Lettuce Leaves          2
Spring Onion             1
Mayonnaise                2  tbsp
Green Chilli               1
Salt to taste       
Method:
1) Boil and peel the potaoes. Halve the potatoes.
2) Chop the lettuce leaves lengthwise into thin strips.
3) Chop the green chilli.
4) Take a bowl and mix all the ingredients well.
Serve cold.

Corn Salad

You will need:
Corn                           1
Onion                          1
Tomato                        1
Green chilli                 1
Lime Juice                  2 tsp
Coriander Leaves (chopped) 1 tbsp
Salt to taste
Method: 
1) Roast the corn under the grill. Cool and remove the kernels out in a bowl..
2) Chop the onion, tomato and the green chilli.
3) Mix all the ingredients together.
Serve cold

Cucumber Raita

You will need:
Cucumber (chopped)               1 cup
Mint Leaves (chopped)           1 tsp
Yogurt                                 1 1/2 cup
Pepper                                 1/4 tsp
Salt to taste
Method: 
1) Beat the yogurt in a bowl to a smooth consistency.
2) Add rest of the ingredients.
Serve cold.

Carrot and Peanut Salad

You will need:
Yogurt                                 1 1/2 cup
Carrots (medium)                  1
Roasted Peanuts                   1/4 cup
Cumin Powder                      1/4 tsp
Green Chilli (chopped)           1
Coriander leaves (chopped)      1
Salt to taste
Method: 
1) Beat the yogurt in a bowl to a smooth consistency. Grate the carrot and crush the peanuts.
2) Mix the grated carrot, peanuts and rest of the ingredients together with yogurt. Chill and serve cold.


Mocktails n drinks

Mango Dream Shake

You will need:
Mango Drink  (Frooti)         300ml     
Vanilla Ice Cream                          2 scoops
Crushed ice cubes
Method:
1) Whizz the ingredients in a blender until frothy and serve.
Dry Fruit Shake
You will need:
Milk                               400ml
Almonds                         10
Pistachios                      5
Dates                             4
Saffron threads              3-4  
Method:
1) Soak the almonds and the pistachios overnight. Peel the skin.
2) In a blender make a smooth paste with all the ingredients and 100ml of milk
3) Pour into a container and mix the rest of the milk.
Serve chilled.

Fruity Ice Tea

You will need:
Water                             3 cups
Cloves                            4
Cinnamon stick              1
Tea Bags                         3
Fruit concentrate             1 cup 
Sugar to taste
Thin Lemon slices           4   
Method: 
1) Boil the water, add the cinnamon, cloves and the tea bags
2) Simmer for 4 to 5 minutes. Remove from heat and strain. Cool.
3) Add the fruit concentrate and sugar. Pour into a Jug and chill.
4) Serve with a lemon slice.

Orange Surprise

You will need:
Aerated orange drink            300 ml
Lime  Juice                         2  tsp                         
Vanilla Ice Cream                 2 scoops
Crushed Ice
Orange Segments                  a few (optional)
Method: 
1) Whizz the drink, lime juice, ice cream and the ice in a blender
2) Garnish with orange segments
3) Serve immediately (so you don't lose the fizz)

Strawberry & Banana Smoothie

You will need:
Yogurt                      1 cup
Strawberries              4
Banana                      1
Honey                        1 tbsp
Crushed ice cubes
Method:
Whizz the ingredients in a blender and serve chilled.

Indian-Style Pineapple Punch

You will need:
Pineapple Juice (carton)  1 litre
Lemon                           1/2
Water                            500 ml
Cloves (whole)                 6 - 7
Cinnamon                      1 (whole)
Cardamoms                    2 pods
Mint Leaves (chopped)       1/2 cup
White Rum (optional)      1/2 cup
Sugar (optional)               to taste

Method:
1) Heat the water with all the spices and mint leaves. Simmer for about 15 mins. Remove from heat. Cover with a lid. Allow to cool and let all the flavours from the herbs and spices infuse.
2) Extract the juice from the lemon.
3) Strain the cooled flavoured water. Add the pineapple juice, lemon juice and white rum. Add sugar to taste (optional).
4) Mix well and serve chilled.
Serving suggestions:
Mix a few drops of green food colouring into drinking water and pour this into ice-cube trays and freeze it.
Use these delightful coloured ice cubes to serve your spiced pineapple juice.

Malai Kulfi

You will need:
Milkmaid           410g  can (chilled overnight)
Double Cream                           200 ml
Sugar                                      3/4  to 1 cup
Cardamom                               2 pods (crushed)
Pistachios                               1/4 cup (chopped)
                       
Method:
1)  Pour milkmaid into a large bowl.
2) Whisk with an electric beater till the quantity doubles.
3)  In a separate bowl whip double cream and desired quantity of sugar.
4)  Fold the whipped double cream into the beaten evaporated milk.
5)  Gently fold the cardamom and pistachios.
6)  Refrigerate in an air tight container.
7)  When semi-set, remove the container from the freezer and beat the kulfi for 5 to 7 minutes.
8) Leave it back in the freezer till the time you want to serve.

Strawberry Shrikhand  

You will need:
Strawberries (large)   4
Yogurt                        3 cups
Cardamom                   2 pods            (crushed)
Pistachios                  2 tbsp           (chopped)
Sugar (Castor) to taste      

Method: 

1) Place the yogurt in a muslin cloth. Hang it over a bowl (for 4 to 5 hrs) to drain off excess water.
2) Puree and strain the strawberries.
3) Beat the yogurt in a bowl until smooth. Add the pureed strawberries, cardamoms, pistachios and sugar. Refrigerate.
4) Decorate with thin slices of strawberry and serve..
