Experimental Taco Appetizers
I think I really wanted phyllo dough, but I wasn't going shopping, so I made strudel dough instead.
Filling --
3/4 cup leftover seasoned taco meat
1/2 cup cheddar cheese
1/4 cup green onion
2 Tbs. sour cream
Combine and refrigerate until needed.
Dough --
Mix:
1 1/2 cups flour
1/4 tsp. salt
Mix together and add:
1 well-beaten egg
1/3 - 1/2 cup tepid water or milk
2 tsp. melted butter
1/8 tsp. vinegar (opt)
Brush with water and let rest 30-60 minutes covered with a bowl. Roll out thinly and then stretch gently. Dough should be about a square yard. Cut into strips (about 2" x 8"). Brush with butter and put filling in one corner. Fold over and roll into a triangle. Bake on a greased sheet at 375 for about 25-30 minutes.
EMILY SAYS: More filling per amount of dough. The dough sort of overpowered the filling. Not completely successful, but definitely needs tweaking.
LYNDA SAYS: Nice combination, and nice flavor, but almost too one-sided; I think I would've liked these better with more of an internal flavor contrast.
