Stuffed Mushrooms
Recipe made up from combining several recipes
1 lb Mushrooms (15 or so medium to large mushrooms)
1 cup bread crumbs
1/4 cup celery, chopped finely (about 2-3 small stalks)
3/4 cup onion, chopped finely (about 1/4 of a large onion)
1/2 cup Parmesan cheese
2 cloves garlic, minced (or the equivalent of 2 cloves)
5 Tbs olive oil (about) - Can also use butter, melted
Remove mushroom stems. In bowl mix dry ingredients. Add olive oil (or butter) until it sticks together enough to stuff the mushroom caps. Stuff the mushroom caps and put them on a cookie sheet and cook for about 20 minutes at 350F, until mushrooms are cooked and the stuffing is golden brown on top.
LYNDA SAYS: I tasted one, and reaffirmed that yup, I still hate mushrooms -- just can't stand their texture. But the stuffing was good.
