Stuffed Dates

Okay, I'm only going to be able to give you approximate measurements since I was pretty much playing it by ear with the recipe.

This is the original recipe:

Stuffed Dates ala Tara.

8lbs of pitted dates
2 1lb bags of powdered sugar (more might be needed)
3 1lb bags of chopped walnuts
2 small canisters (the $.99 kind) of ground cinnamon
2 small canisters (same kind) of dried orange peel
ground cloves to taste
Water

This is what I made:

1lb pitted dates
1 lb powdered sugar
3/4 lb finely chopped walnuts
ground cinnamon
dried orange peal
ground cloves
water

Mix together the powdered sugar and walnuts. This is where it gets tricky: add as much seasoning as you think it needs. I added probably ~1tbs orange peel, ~1tbs cinnamon, ~1tsp cloves. Those measurements are more than likely wrong, but it gives you the idea of how much of each you need (cloves are very potent, so be careful with adding them). Add water 1tbs at a time and stir until the mixture becomes a pretty thick paste.

Slit the dates open (insert blade into opening and slit through only once) and then stuff them with filling. I suggest using a very small spatula if you have one, they work uber good.

I had more than enough filling, probably enough for another pound of dates, so I'd 'halve' everything if I was going to make it again for 1lbs of dates.

LYNDA SAYS: I like! They tasted like my aunt's spiced nuts, only with dates. I'm not sure I'm in Sarah's camp with them being a dessert I'd choose over chocolate, but then, I'm notably overfond of chocolate. *grin*
