Mandarin Chicken Breasts

4 boneless chicken breasts (1 lb. skinned)
PAM and 2 tsp. vegetable oil
1 11-oz. can unsweetened mandarin oranges, UNdrained
2 Tbs. firmly packed brown sugar
1 tsp. prepared mustard
3 Tbs. low calorie ketchup
1 Tbs. vinegar
1 tsp. cornstarch
1/2 tsp. ground cinnamon
1/8 tsp. ground cloves

Coat a large skillet with PAM and add oil. Place it over medium-high heat till hot. Add chicken and cook 2-3 minutes per side till light brown.

Drain oranges, reserving juice. (Set oranges aside.) Add remaining ingredients to juice. Stir well and pour over chicken. Cover and simmer for 30 min. Add oranges and simmer another 5 min. Serve immediately.


LYNDA SAYS: Nice flavor and sauce. While I agree this would've been a little better with some plain or lightly seasoned rice, I liked it very well the way it was. 8)
