Fresh Lime Ice Cream

1/2 cup plus 1 tbsp. fresh lime juice
1 tbsp. plus 1 tsp. grated lime zest
2 cups sugar, preferably superfine (use food processor on granulated)
1 pinch of salt
2 cups heavy cream (whipping)
2 cups milk

Directions: Combine lime juice, lime zest, sugar and salt. Mix well. Gradually stir in the cream and then the milk. Stir until the sugar dissolves. Cover and refrigerate for at least four hours or overnight. Stir mixture and pour into ice cream maker.


ERIK SAYS: The lime turned out absolutely fantastically. My only comment on that is this recipe makes too much to freeze in my machine. I had to freeze it on two batches.

LYNDA SAYS: This was some of the best homemade ice cream I've ever tried and was the only dessert for which I squeezed room for seconds. The lime was glorious on its own.
