Lemon Jello Cake
From the mom of a friend at work

1 pkg. Lemon Jello, dissolved in 1 cup boiling water; cool.

In mixing bowl, put yellow cake mix, 3/4 cup oil, 4 eggs (beat after each one), 1 tablespoon lemon extract.

Beat well and add cooled Jello. Bake in 13x9x2 inch greased pan at 350 degrees for about 35 minutes or until done.

While baking, mix 1 cup powdered sugar with enough lemon juice to make a glaze.

After cake is done, IMMEDIATELY use a fork to punch lots of holes in the cake (be sure to punch the holes all the way to the bottom of the pan).

Pour topping over top of cake and spread so that topping goes into holes.


CINDY SAYS: I find this to be *very* lemony. Very good, and sweat, but almost overpoweringly lemony, just as a warning. This is more than just a normal lemon-flavored cake.

EMILY SAYS: Cindy said it would be lemony, but WOW. I LIKE.

LYNDA SAYS: I loved that this was significantly more tart than most lemon cakes and than most jello anything. Lovely flavor, nice texture, decidedly yummy.
