Welsh Rarebit
From "International Cook-book - collected by Mrs. Kotsaki's' and Mrs. Senner's class of 1969."
1 cup medium white sauce made with:
2 tbsp butter or margarine
3 tbsp flour
1/8 tsp dry mustard
1/4 tsp salt
a bit of pepper
1 cup milk
3-4 oz grated cheddar cheese
Slices of toast
1. Melt butter in saucepan over LOW HEAT.
2. Remove from heat and add fluor, salt, mustard and pepper. MIX WELL.
3. Add milk and stir thoroughly.
4. Return to low heat and cook 1-2 min. STIR CONSTANTLY UNTIL THICK.
5. Remove froim heat and add grated cheese. Return to heat and cook until cheese melts.
6. Serve immediately on toast.
