PASTA AND POTATO SOUP

Ingredients:

 

2 tbsp olive oil

½ small onion, chopped

2 - 3 meduim potatoes, peeled and cubed

1 cup tomato chunks

3 cups (plus a little more) water

½ tsp basil

½ tsp parsley

½ tsp black pepper

1 tsp salt

1 small stalk of celery

pasta (elbow/ditali)

 

Directions:

 

Heat oil in soup pot over medium heat.  Add onion pieces and potato cubes (to reduce cooking time, microwave potatoes, peel and cube under cool water).  Cook and stir.  Add tomato chunks.  Cook until soft.  Add water, celery stalk, basil, parsley, salt and pepper.  Reduce to low heat and cover.  Simmer for 30 - 45 minutes, stirring occasionally.  Cook pasta, according to directions, in a separate pot.  Drain and add to soup when ready.  Remove celery stalk.
