CALIFORNIA
CABBAGE SOUP

Ingredients:
¼ cup
shortening
1 cup diced
onions
½ cup flour
2 qts stock -
chicken or beef
½ cup tomato
puree
salt and
pepper to taste
2 cups diced
potatoes
1 head
cabbage - shredded (about 1½ lb)
Directions:
Put
shortening in pot with diced onions and sauté until onions soft - not
brown. Add flour and cook 5 minutes on
low heat while stirring constantly. Add
stock and tomato purée, season to taste, mix well and let boil for 30
minutes. Add shredded cabbage and diced
potatoes and cook 45 minutes to 1 hour or until cabbage and potatoes are
tender.
