POTATOES GRATIN WITH BLUE CHEESE

Ingredients: 

 

4 oz. Blue cheese

½ cup heavy cream

2 lb Yukon Gold potatoes, peeled and sliced ⅛" thick

1 tsp salt

2 cups milk

1 ½ tbsp butter

 

Directions:

 

Preheat oven to 350°.  Butter a 2 quart rectangular or oval dish (14" x 8" x 2").  Process the cheese and cream together in a food processor.  Overlap ½ of the potatoes in 1 layer in the baking dish.  Sprinkle with salt and cover with half of the cheese mixture.  Layer remaining potato slices on top, pour milk and then add remaining cheese mixture.  Dot with butter and bake in the middle of the oven for 1 ½ hours, until golden brown.
