ORZO PILAF

Ingredients:
1 tbsp butter
1 tsp olive oil
½ cup mushrooms, diced
¼ cup chicken broth
1 tbsp fresh chopped parsley
1 ½ oz. Uncooked Orzo (cooked according to directions and
drained)
⅛ tsp salt
2 tbsp parmesan cheese
Directions:
In a skillet,
combine butter and oil. Heat until
butter melts. Add mushrooms, garlic and
sauté over medium heat until mushrooms are soft (1 – 2 minutes). Stir in broth and parsley, cook for 2 – 3
minutes, stirring occasionally. Stir in
orzo and salt. Stir frequently until
orzo is heated thoroughly (1 – 2 minutes).
Add grated parmesan cheese, stir thoroughly and serve.
