ANCHOVY POTATOES

Ingredients:

 

⅓ cup olive oil

¼ cup chopped fresh thyme or 1 tbsp dried, crumbled

3 tbsp anchovy paste

3 garlic cloves, minced

4 lb medium sized red new potatoes, quartered

olive oil

 

Directions:

 

Preheat oven to 425°.  Grease 2 heavy large rimmed baking sheets with olive oil.  Mix cup of oil, thyme, anchovy paste and garlic in a large bowl.  Add potatoes, toss to coat.  Divide potatoes between prepared baking sheets, spacing at least ½ " apart.  Bake potatoes until tender and golden brown, turning occasionally, about 45 minutes.
