WINE COOKIES

(“Dog Biscuits” as Maria Mancini Caprara called them)

Ingredients:

 

1 cup sugar

˝ cup brown sugar

1 cup oil

1 cup wine (white muscatel)

3 or 4 eggs

flour to molding consistency (about 4 – 5 cups)

3 tsp baking powder

1 ˝ tsp baking soda

 

Directions:

 

Mix eggs and oil.  Combine dry ingredients – begin with 2 – 3 cups of flour.  Alternate adding flour and wine to egg mixture.  Continue to add flour until right consistency, i.e. until dough does not stick.  Form pieces of dough into doughnuts, stick ends together.  Sprinkle with sugar.  Cook at 350° for 20 to 30 minutes until lightly browned.
