MINT SURPRISE COOKIES

Ingredients:

 

3 cups flour

1 tsp baking soda

½ tsp salt

1 cup butter (or margarine)

½ cup brown sugar

1 cup sugar

2 tbsp water

2 eggs

1 tsp vanilla

10 oz mint wafers – 3 ½ - 4 oz. Box  (2 mints per cookie)

Directions:

 

In a bowl, sift together flour, baking soda and salt.  In a separate bowl, cream together butter, sugar and brown sugar.  Blend water and vanilla into creamed mixture.  Add flour mixture to creamed mixture a little at a time.  Mix thoroughly.  Refrigerate dough for 2 hours or overnight.  Enclose mint wafers in approximately 1 tsp of cookie mix.  Top each cookie with walnut half or piece.  Place 2 inches apart on cookie sheet.  Bake at 375° for 10 – 12 minutes.
