ALMOND
COOKIES
(Amaretti)

Ingredients:
14 egg whites
7 cups almonds
6 cups sugar
2 pkgs lady finger
cookies (250 g each)
1 tsp baking powder
1 bottle of almond
extract (50 ml)
Directions:
Beat egg whites
until stiff peaks are formed. Set
aside. Grind almonds in food
processor. Set aside. Grind lady fingers and add to ground
almonds. Add egg whites, almond
extract, sugar, and baking powder to almond/lad7y finger mixture. Mix well.
Shape dough into small balls and roll in sugar sprinkled on wax paper
(wet hands first). Bake at 350°
