SUMMER TOMATO SAUCE

Ingredients:

 

1 lb firm, ripe tomatoes, chopped finely

1 onion, chopped

6 green olives, chopped

1 tbsp capers, chopped finely

¼ tsp oregano

⅓ cup chopped parsley

2 garlic cloves, crushed

½ cup oil

 

Directions:

 

Combine all ingredients and mix well.  Cover and refrigerate overnight.  Serve cold over hot pasta.
