SPIRALI E SPINACI

Ingredients:

 

8 stalks of fresh spinach, finely chopped

3 oz. Coppa (smoked pork), diced

1 small garlic clove, minced

¼ red pepper

½ small onion, minced

1 small red chili (remove seeds and cut into slices)

4 tbsp oil

2 tbsp grated parmesan cheese

1 ½ lb spirali

salt and pepper to taste

 

Directions:

 

Cook pasta.  Heat oil;  add garlic, peppers, onion and coppa.  Cook for 2 minutes.  Add spinach and cook for an additional 2 minutes, stirring constantly.  Add parmesan cheese and season with salt and pepper.  Add to cooked pasta.
