SCALLOPS ALLA EDIE

Ingredients:

 

1 lb large scallops

½ lb mushrooms, sliced

2 tbsp butter

½ pint light whipping cream

1 tbsp lemon juice

salt and pepper to taste

flour

 

Directions:

 

In a plastic bag, place several heaping teaspoons of flour.  Add no more than half of the scallops.  Shake bag to coat scallops with flour (it is advised that the bag be secured before the shaking process begins!).  Set coated scallops aside and flour remaining scallops.  Sauté mushrooms until soft, set aside.  In a large frying pan, melt butter over medium heat, being careful not to burn.  Add scallops and sauté for approximately 10 to 15 minutes.  Season with salt and pepper.  Add mushrooms and sauté for another 2 minutes.  Add cream and lemon juice and sauté for 2 minutes more.  Serve immediately.
