PORK CHOPS SMOTHERED WITH ONIONS & THYME

Ingredients:

 

2 center cut pork loin chops, 6-8 oz. – 1” thick

1 tbsp olive oil

1 large onion, sliced

1 tsp dried thyme, crumbled

½ cup chicken broth

 

Directions:

 

Season pork chops with salt and pepper.  Heat oil in heavy skillet over medium-high heat.  Add pork chops, cook until brown (about 3 minutes).  Transfer to plate.  Add onion to skillet.  Reduce heat to medium-low.  Cover skillet and cook onion until soft and lightly brown, stirring occasionally (about 7 minutes).  Add thyme.  Stir for 30 seconds.  Return pork chops and any juices to skillet, spoon onions over chops.  Add broth and bring to a simmer.  Reduce heat and cover pan, allowing to simmer.  Cook chops about 10 – 15 minutes.  Transfer chops to plate.  Simmer sauce on high until slightly reduced.  Spoon sauce and onions over pork and serve.
