MINT PESTO

Ingredients:

 

4 cups fresh mint leaves

1 cup olive oil

4 garlic cloves

½ cup walnuts

2 tbsp fresh lemon juice

1 tbsp parmesan cheese

fresh ground pepper to taste

 

Directions:

 

Combine mint, garlic, walnuts and parmesan cheese in food processor.  Scrape sides of food processor.  Add lemon juice and fresh ground pepper.  While running the food processor gradually add olive oil.  Continue until smooth.
