CHICKEN
SATIMBOCCO

Ingredients:
1½ tsp crumbled sage
½ tsp ground pepper
6 skinless chicken
breasts pounded to ¼" thickness
6 slices of prosciutto
4 tbsp butter, melted
⅓ cup dry bread crumbs
2 tbsp parmesan cheese
2 tbsp parsley, chopped
Directions:
Prehead oven to 350°. Sprinkle the sage and pepper over the
chicken. Place a slice of prosciutto on
top. Roll up ‘jelly roll’ style and
secure with a tooth pick. Place butter
in a shallow dish. In another shallow
dish, combine bread crumbs, parmesan cheese and parsley. Dip chicken in melted butter then roll in
crumb mixture. Place chicken in shallow
dish suitable for the oven. Bake 40
minutes, until tender. Remove
toothpicks and serve.
