ZUCCHINI BREAD

Ingredients:

 

2 cups sugar

1 cup shortening

3 eggs

3 tsp vanilla

2 cups grated zucchini

3 cups flour

1 tsp baking soda

¼ tsp baking powder

3 tsp cinnamon

½ cup chopped walnuts

½ cup raisins

 

Directions:

 

Cream sugar, shortening and eggs.  Add vanilla and zucchini.  Blend dry ingredients and add to creamed mixture.  Stir in nuts and raisins.  Divide into 2 well greased and floured loaf pans.  Bake at 350° for 50 to 60 minutes.
