SODA BREAD

Ingredients:
3 cups plus 1 tbsp
all purpose flour – divided
3 tbsp sugar
1 ½ tsp baking soda
¾ tsp salt
½ tsp baking powder
½ cup butter or
margarine
⅔ - 1 ½ cup raisins
buttermilk
Directions:
Preheat oven to 350°. In a bowl, combine 3 cups flour, sugar, soda,
salt, and baking powder. Using two
knives, cut in butter until mixture resembles coarse crumbs. Stir in raisins. Stir in buttermilk until ingredients are moistened. Turn dough out onto lightly floured
surface. Sough will be very soft. Kneed lightly. Transfer to ungreased baking sheet, shape into 8" round. Sprinkle with remaining flour.
Cut a ¼" deep cross into top. Bake 1 hour and 10 minutes.
