| Dried Cherry Cardamom Bread |
| 3/4 cup sugar 1/2 cup butter, softened 1 tsp vanilla 1 cup buttermilk 2 eggs 2 cups all purpose flour 1 cup dried cherries, chopped 1 tsp grated lemon peel 1/2 tsp baking powder 1/2 tsp baking soda 1/2 tsp salt 1/2 tsp cardamom Heat oven to 350. Spray bottom onlyorf 9x5 or 8x4 loaf pan with cooking spray. In large bowl, combine sugar and butter. Beat till light and fluffy. Beat in vanilla. Add buttermilk and eggs. Blend well. Mixture will appear curdled. In small bowl, combine all remaining ingredients; mix well. Add buttermilk mixture; stir just until dry ingredients are moistened. Pour batter into pan. Bake until toothpick inserted comes out clean. For 9x5 pan cook for 50 - 65 minutes, for 8x4 pan cook for 55 - 75 minutes. Loosen edges of bread; cool in pan on wire rack for 15 minutes. Remove bread from pan; place on wire rack. Cool 1 1/2 hours or until completely cooles. Wrap tightly and store in refrigerator. Ingredient Substitution: Used dried cranberries or chopped dates in place of cherries. |
