Zuchinni Bread
2/3 cup shortening
2 cups sugar
4 eggs
1 Tablespoon vanilla
3 cups shredded zuchinni
2 cups all purpose flour
1 cup whole wheat flour
2 teaspoons baking soda
1-1/2 tsp salt
1/2 tsp baking powder
2 tsp ground cinnamon
1 tsp ground cloves
1/2 tsp ground ginger
1 cup chopped nuts
1 cup raisins

Heat oven to 350. Grease bottoms of 2 loaf pans. Mix together shortening, sugar, eggs, vanilla, and zuchinni.  Stir in flour, baking soda, salt, baking powder, cinnamon, cloves, nuts, and raisins.  Pour into pans. Bake until a knife inserted in center comes out clean, about 1 hour.  Loosen loaves from the sides of pans, remove from pans. Let cool completely before slicing.

2 cups sugar

1/2 tsp baking powder
1 Tblsp vanilla
3/4 cup baking cocoa
1 cup chopped nuts

Heat oven to 350. Grease bottoms of 2 loaf pans. Mix together shortening, sugar, eggs, vanilla, and zuchinni. Stir in flour, baking soda, salt, baking powder, baking cocoa, and nuts. Bake until a knife inserted in center comes our clean, about 1 hour. Loosen loaves from the sides of pans, remove from pans. Let cool completely before slicing.
