Filled Muffins
These are great for breakfast or lunch. Not really a
dessert. More like a coffee cake or snack cake.

Muffin batter:
8 cups Buttermilk Biscuit Mix      3 cups milk
1/4 cup granulated sugar             4 eggs
3/4 cup applesauce                     1 tsp. cinnamon

Preheat oven to 400F. Combine all ingredients Blend
1min. on low speed.

Filling:
1 1/2 cup packed brown sugar    1 cup butter
1 1/2 cup Buttermilk Biscuit Mix  3/4 cup applesauce
2 teaspoons Cinnamon                1 cup Quick Oats
1/2 cup chopped walnuts(optional)
Mix together with a fork.

To Bake:

Line muffin cups. Spoon 1 Tablespoon of filling into
bottom of Large; or 1/2 T into regular muffin cups.
Pour in muffin batter to fill 1/2 muffin cups.
Spoon on 1T fillin on top of Large and 1/2
Tablespoon on top of small muffing cups. Bake Large  15-18mins. and Small 12-15mins.
Eat hot with a spoon.
Easy Cheesecake
1 package No Bake Cheesecake                   Milk
1 small package vanilla instant pudding         butter
    granulated sugar                  10" round pie plate

Prepare No Bake Cheesecake according to
directions on the box. Add instant pudding and 1
cup of milk to the cheesecake filling.

Toppings:
1 can Cherry Pie filling
1 pint Fresh or frozen strawberries sliced and
   mixed with 2Tbs sugar
No-bake Cookies
2 cups sugar                     1/4tsp salt   
2/3 cup milk                      2Tbs butter
1/3 cup baking cocoa         1tsp vanilla
2Tbs light corn  syrup        1/2 cup peanut butter
4 cups quick oatmeal

Heat sugar, milk, cocoa,corn syrup, and salt in 3qt.
saucepan over med. heat, stirring constantly, until
sugar is dissolved. Cook, stirring occaisionally, to
234 degrees. Remove from heat, add butter, vanilla, and  peanut butter. Stir in oatmeal. quickly drop by
spoonfuls onto waxed paper to cool.
Peanut Butter Chocolate Chip Cookies
This is my own recipe for delicious soft and chewy
cookies.. You will need a very big mixing bowl. It
makes several dozen cookies. But for some reason
there are never enough.

Pre-heat oven to 375 degrees F.
Step 1-Cream together: with electric mixer
1Tbs. baking soda              1Tbs. salt
1/2cup butter (softened)     2cups peanut butter(18oz)
1/2cup shortening              2cups granulated sugar     2cups brown sugar             1Tbs. vanilla                  1-1/2cup water

Step 2-Mix together dry ingredients:
6-7cups flour*                     1c egg mix powder*
12oz pkg. chocolate chips

Step 3-Mix dry ingredients into creamed mixture.
Mix well with a spoon. It will be too stiff for an
electric hand mixer.

Roll into balls or drop by tablespoon  onto ungreased cookie sheet, about 2in apart. Bake for 8-10mins. Cool slightly.
Romove from cookie sheet, place on wax paper to
cool.

*If you don't have egg mix powder use 6-8 fresh
eggs in place of the water and omit the water.

*about 2cups whole wheat flour and 4-5cups all purpose flour.
