| Old Fashioned Fish Chowder 1 lb. cod or haddock fillets 2 to 3 c clam juice 1 oz salt pork (I use bacon) 2 medium onions chopped 2 tbs. flour 3 medium potatoes, cut into �� cubes 4 cups milk, scalded � tsp. mace (optional) Salt and pepper to taste 2 tbs. Butter Chopped parsley (optional) Poach fish gently in 1-cup clam juice for 4 to 5 minutes. Add a little water if necessary. Set aside. Cook pork/bacon, take out meat and reserve. Cook onions in the pork fat (cooking oil can be substituted at some loss of flavor) until soft and translucent, sprinkle in flour stirring to blend. Gradually stir in remaining clam juice, add potatoes and cook 2 to 3 minutes over low heat. Add the scalded milk. Flake fish and add to pot, along with juices and pork pieces, serve the chowder hot. Sprinkle a little parsley on each bowl before serving. |

| Sundance Cheese Fondue This is really good! 1 3/4 cups chicken broth 1 or 2 cloves garlic Heat the above until almost boiling and then add: 2 cups Swiss cheese cubed 2 cups Monterey Jack cheese cubed While cheese melts mix in a separate bowl: 1/4 cup chicken broth 3 tbs.. cornstarch Dash of pepper, Worcestershire, and nutmeg Combine all ingredients after cheeses melt and keep at a temperature just below boiling. Serve with cubed French bread dippers. We like to make a meal of this with a big salad and some white wine. |
| Oven French Toast This recipe can be made in advance and refrigerated over night 3 tbs. margarine or butter, melted 1/3 c. orange juice 2 tbs. honey 3 eggs 8 slices French bread, each 1 inch thick Pour margarine in jelly roll pan, 15x10x1 inch. Beat orange juice, honey and eggs with a wisk or fork until foamy. Dip bread into egg mixture; place on pan. Drizzle any remaining egg mixture over bread. Cover and refrigerate no longer than 24 hours. Heat oven to 450 degrees. Bake uncovered until bottoms are golden brown, about 10 minutes; turn bread. Bake until bottoms are golden brown, 6 to 8 minutes longer. Serve with maple syrup if desired. |
| Michelle�s Coconut Macaroons These are really easy and good! 3 cups coconut 2/3 cup sugar 4 egg whites 4 tbs. flour 1 tsp. vanilla 1/4 tsp. salt Preheat oven to 375 degrees. Beat egg whites until stiff and fold in remaining ingredients. Bake 15 to 20 minutes or until light brown. |
