Twice Topped Cake

Cake:
2 c flour
1 c sugar
1 tsp soda
1 tsp salt
1 can {13 ½ oz} crushed pineapple, undrained
1 tsp vanilla
2 eggs
Dump all CAKE ingredients into large mixing bowl and
blend at low speed until blended. Beat 2 minutes at medium speed. Pour
into a 9” square pan which has been greased on the bottom only. Sprinkle
with TOPPING.
Bake at 350 degrees for 45 to 50 minutes until cake
springs back when touched in the center.
During the last few minutes of baking time, prepare
the SAUCE and pour over warm cake. Cool before serving.
TOPPING:
½ c firmly packed brown sugar
½ c flaked coconut
½ c chopped pecans
Combine all ingredients.
SAUCE:
½ c butter
½ c light cream
½ c sugar
½ tsp vanilla
In small pan, melt butter. Blend in remaining ingredients.
