Quick Cherry Delight

A quick and easy dessert that is really good for those last minute throw togethers when you have unexpected company. We've also used Apple Pie Filling, Blueberry Pie Filling and just about everything else.
 

2 c flour
1 1/2 c sugar
3 1/2 tsp baking powder
1 tsp salt
1/4 cup butter, unsalted
1/4 c shortening
1 c milk
2 tsp vanilla extract
3 eggs.

Dump all ingredients into a large mixing bowl. Beat on low speed, scraping sides of bowl constantly, till well combined. Beat on high speed, for approximately 3 minutes.

Butter a 13" by 9" baking pan. Turn mixture into pan. Spoon the pie filling onto the batter in about 16 spots. Bake for 45 to 50 minutes, until cake is golden and tests done. Filling will sink into cake while baking.

To serve, DO NOT remove cake from pan, cut into 16 pieces, place bottom side up on serving plates, add a large dollap of whipped cream, dust with powdered sugar, and watch your family and company beg for more.
