Pumpkin Squares
1 can [16oz} pumpkin pie filling
4 eggs
¾ c vegetable oil
2 tsp vanilla extract
2 c flour
2 c sugar
1 Tbsp pumpkin pie spice
2 tsp cinnamon
2 tsp baking powder
1 tsp baking soda
½ tsp salt
In a small bowl, beat pumpkin,
eggs, oil and vanilla until well mixed. Combine dry ingredients; stir into
pumpkin mixture and mix well. Pour into a greased 15”x10”x1” cookie sheet.
Bake at 350 degrees for 20 – 25 minutes or until cake tests done with a
toothpick. Cool.
Frosting
6 Tbsp softened margarine
1 {3 oz} pkg cream cheese, softened
1 ½ tsp vanilla
1 tsp milk
1/8 tsp salt
2 c powdered sugar
In small bowl, beat the margarine,
cream cheese, vanilla, milk and salt until smooth. Add powdered sugar;
mix well. Frost cake and cut into squares. Keep refrigerated.
