Peter Pans Peanut Butter Cake
2 c flour
2 c sugar
1 tsp baking soda
½ tsp salt
1 c water
¾ c butter
½ c crunchy peanut butter
¼ c vegetable oil
2 eggs
½ c buttermilk
1 tsp vanilla
GLAZE
2/3 c sugar
1/3 c evaporated milk
1 tbsp butter
1/3 c crunchy peanut butter
1/3 c miniature marshmallows
½ tsp vanilla
In large bowl combine flour, sugar, baking soda and
salt and set aside. In a saucepan, bring the water and butter to a boil;
stir in peanut butter and oil until well blended. Add the wet mixture to
the dry ingredients and mix well. Combine eggs, buttermilk and vanilla;
add to peanut butter mixture and mix well.
Pour into a greased and floured 15 x 10 x 1” baking
pan. Bake at 350 degrees for 16-20 minutes or until a toothpick inserted
in the center comes out clean.
For glaze, combine sugar, milk and butter in saucepan.
Bring to a boil, stirring constantly; cook while constantly stirring
for 2 minutes. Remove from heat and stir in peanut butter, marshmallows
and vanilla until marshmallows are melted. Spoon over cake while still
warm and spread over the top.
