My Favorite Chocolate Cake

2 eggs
2 c sugar
½ c cocoa powder
1 c buttermilk
2 1 /2 c flour
2 tsp soda
½ tsp salt
1 ¼ c vegetable oil
1/8 tsp cream of tartar
1 c very hot water
Mix all ingredients together, except hot water, and
beat at high speed with mixer. Add hot water and continue beating for 1
minute. Pour into prepared 13x9 inch sheet pan. Bake at 300 degrees until
done, about 40 minutes.
Coconut Cream Cheese Frosting
4 tbsp butter
2 c coconut
8 oz softened cream cheese
2 tbsp milk
3 ½ c powdered sugar
½ tsp vanilla
3 tbsp cocoa powder
Blend all ingredients, except coconut, until smooth
then stir in the coconut. Will frost a 9 by 13 inch sheet cake.
