Devils Food Cake
2 cups cake flour
1 tsp baking soda
¾ tsp salt
½ c soft shortening {no
substitutions}
1 1/3 c sugar OR 1 1/2 c packed
brown sugar
2 medium eggs
3 sqs unsweetened chocolate
1 ¼ c, less 2 Tbsp milk
1 tsp vanilla
Preheat oven to 350 degrees.
Grease and flour, or use Bakers Joy, 2 9” layer pans.
Sift together flour, soda and
salt. With mixer at medium speed, cream the shortening and sugar,
then eggs, until very light and fluffy; mix in the melted chocolate. At
low speed, beat in alternately, just until smooth, flour mixture in fourths
and milk and vanilla combined, in thirds.
Pour into pans and bake 25 to
30 minutes or until the cake tests done. Cool about 10 minutes before removing
from pans and frost with your favorite frosting.
