AMBROSIA

Ingredients
1 cup of plain yogurt
2 pkgs. of Equal or Sweet and Low
1 tsp. coconut EXTRACT
1 orange, peeled and cut into pieces
1/2 cup pineapple chunks, in their own juice

Directions

Mix and chill.

2 fruits and 1 1/3 cups milk




BERRY SHAKE

Ingredients
1/2 cup evaporated skim milk
1/2 cup fresh or frozen
     unsweetened strawberries
1 teaspoon each honey and vanilla
DIRECTIONS
In blender combine all ingredients and blend until thick and smooth.

Makes 1 serving.


Garden Potato Salad

Ingredients
3 lbs. (about 6 large)   potatoes, boiled in skins, peeled and cut into ½-inch cubes
1 cup                      chopped celery
½ cup                      sliced green onion
2 tablespoons            chopped parsely
1 cup                      low-fat cottage cheese
¾ cup                      skim milk
3 tablespoons             lemon juice
2 tablespoons             cider vinegar
½ teaspoon                celery seed
½ teaspoon                dill weed
½ teaspoon                dry mustard
½ teaspoon                white pepper

Directions
1. In a large mixing bowl, place potatoes, celery, green onions, and parsely.
2. Meanwhile, in a blender or food processor, blend cottage cheese, milk, lemon juice, vinegar, celery seed, dill weed, dry mustard, and white pepper until smooth. Chill for one hour.
3. Pour chilled cottage cheese mixture over vegetables; mix well. Chill at least 30 minutes before serving.
Yield:     10 - servings - serving size: 1 cup
