Bolinhas de Camarao (Shrimp Patties)

2 1/2 lbs. of shrimp (boiled, de- vained and diced)
1 1/2 lbs of white potatoes (boiled and diced)
1 medium green pepper chopped and 1 onion chopped 4 eggs
1 cup of milk (1/2 evaporated milk and 1/2 water) salt
pepper
chopped parsley
2 cups of flour

Mix the first four ingredients. Beat the eggs and add them and the milk. Add salt, pepper and parsley . Mix and adding the flour until you can pick the mixture by the tablespoon full and form it into little balls. Make sure it holds together when you drop it into some hot oil to fry. Fry a few at a time in vegitable oil and drain them on paper towles.
