Creamed Tuna
Make a cream sauce from 1 cup evaporated milk, 2/3 c water (or 1 2/3 c regular milk), 1 T butter, 2-3 T Flour, salt and pepper to taste.  When sauce has thickened, add 1 can tuna.  Stir until heated through. 
Serve over hot biscuits, rice, or mashed potatoes accompanied by a tossed salad.  Serves 2

(Variation - Instead of making a white sauce, use a can of cream of mushroom or cream of celery soup.  Add 1/2 can milk to soup, instead of the usual 1 can.  Then stir in the tuna and heat through.)
Tracey's Delicious Pasta Salad
Start with your favorite pasta and add whatever you like!!  I like the
Shell Macaroni 1/2 bag (1/2 lb) and cook according to directions on bag and everything else is to taste:
boiled eggs
black olives
sweet pickle relish
grated carrots
shredded cheese
chopped onion
celery seed
miracle whip
I think it is better after it sits overnight in the refrigerator but add more m. whip before serving!  YUM!
1 Pork Tenderloin (cut into 3/4 in slices)
   saltine crackers, made into meal (use blender or processor)
1 c milk
1 T bouillon
4 Hamburger Buns

4 Servings
1.  Cut the pork tenderloin into 3/4 in slices                 (I may try to pound and then slice next time)
2.  Pound the slices until each is about 1/4 thick
3.  Place the cracker meal in a dish
4.  In a second dish, pour in the milk and stir in the bouillion
5.  Dip each slice in the milk and then cracker dish -Coat well
6.  Deep fry in a fry daddy or deep fryer at 375 until golden (I pan fried them)
7.  Drain
8.  Serve on a bun.

Fried Pork Tenderloin Sandwich
Homemade Mac N Cheese
Boil one bag (1lb) Macaroni according to directions.  Meanwhile, make a white sauce:  Melt 3 T butter add 3 T flour, 1 t. salt  Add 1 1/2 C milk, gradually stirring to make a paste first; add remaining milk.  Heat, then add 8 oz shredded sharp cheddar cheese.  Stir till melted.  Drain and rinse macaroni, put in casserole.  Add cheese sauce, (Enjoy or) bake at 350 for 30 minutes. 
                     Kacey's Mexican Rice
  
  1 cup rice
  2 cups broth
  green peppers
  onions
  clove garlic
  1 pk Sazon Goya (has MSG)
  1 tomato bullion
  1 chicken bullion
  1 can corn
 
Brown uncooked rice in EVOO (stir constantly), add garlic.  Stir in veggies (have prepared in advance).  Add corn (can save water to use instead of/with broth) and seasonings.
  Cover and cook approx 20 min.  Don't stir or lift lid.  If mushy, cover w/ fire off.  If still hard add water and cook longer.
