Cinnamon Loaf |
| Ingredients: |
| 1/3 Cup Sugar 2 Tbsp. Softened Margarine 1 Tbsp. Cinnamon |
Combine sugar margarine and cinnamon and set aside. |
| 1/2 Cup Shortening 3/4 Cup Sugar 1 tsp. Vanilla 2 Eggs 2 Cups Flour 1 tsp. Baking Soda 1/2 tsp. Salt 1 Cup Milk 1 Tbsp. White Vinegar |
Grease and flour the bottom only of a 9x5x3 inch loaf pan.� Cream shortening, sugar, and vanilla in medium mixing bowl.� Add eggs and beat well.� Add baking powder, soda, and salt.� Combine milk and vinegar in measuring cup.� Add flour alternately with milk mixture, blending well after each addition.� Turn half the batter into the loaf pan.� Sprinkle with cinnamon mixture.� Top with remaining batter.� Swirl with knife.� Bake at 325� for 45 minutes or until inserted toothpick comes out clean.� Let cool and turn out on serving plate.� (Hint--put a layer of foil under the loaf pan during baking in case your mixture bubbles over. |
