Apple Cider

I started making mulled apple cider when my Dad gave me mulling spices.  Ever since, I've really enjoy it.  This is the best recipe ever.  It's my own special recipe.  If you don't have whole allspice, regular ground allspice works too.  This is a good cold day drink.  And the rum is never optional.

Ingredients

8 cups unpasteurized apple cider
2 cinnamon sticks
2 teaspoons whole allspice
10 whole cloves
1 navel orange, peeled and sliced crosswise
2-inch piece of peeled fresh ginger, cut into 6 slices
1 cup rum (optional)

Directions

In a large saucepan combine the cider, the cinnamon sticks, allspice, the cloves, the orange, the rum and the ginger and simmer the mixture for 20 minutes. Strain the mixture through a fine sieve into a heat-proof pitcher and serve the mulled cider warm.

Makes about 8 cups.
