Lateral meristems are cylinders of dividing cells that are along the length of the roots and shoots and are responsible for the width-wise growth of plants.  One lateral meristem, the cork cambium, is responsible for replacing the epidermis with a secondary tissue, such as bark.  Another lateral meristem, the vascular cambium, adds layers of vascular tissue:  xylem and phloem.
