| Spicy Poached Squid Salad with Mint Dressing |

| 140g sliced squid 1-2 teaspoons mint leaves 1 tbs sliced lemongrass 1 tsp kaffir lime leaves 1 tsp sliced shallot 1 tbs fish sauce 1 tsp sliced garlic 1 tbs sugar 1 tsp sokced hot chilli 1-2 tsp lime juice |
| prepare the dressing; mix fish sauce, sugar and lime juice. add mint leaves, kaffir lime leaves, sliced lemongrass, garlic, shallot and hot chilli and mixed well. poach the squid and place on top. finish the salad by putting the dressing on top. garnish and serve. |

| 1 whole eggplant 2 tbs fish sauce 2 tbs shredded cooked chicken 1/2 tbs sugar 3 tbs cooked prawn 1/2 tbs lime juice 1/2 -1 tsp chilli powder 1tbs deep-fried shallot 1 tsp dried shrimp powder 1 tsp coconut milk |
| grilled eggplant, peel and slice. (inside water) place on serving dish. garnish with chicken and prawn. prepare the dressing by mixed chilli powder, fish sauce, sugar, lime juice, deep-fried shallot and chili powder together and put on top of the eggplant. decorate with dried shrimp powder and coconut milk. |
