sauted lovster with chili sauce and stirfried prawn with rock melon
ingredient
1 kg fresh australia lobster   
500g jumbo prawns
half no rock melon
1 no  japanese cucumber (thinly sliced)
5 g  red chilli minced
5 g garlic minced
5 g carrot (cut into decorative shape)
1tsp chill bean sauce
1 tsp chill sauce
1/3 tsp sugar
1 tsp oyster sauce
1 tsp  flour
1 tsp sesame oil
1 tsp chill oil
remove the meat frim lobster tail and steam the lobster head for presentation
slice the lobster meat in thin pieces
marinated the jumbo prawns with 5g of salt, 5g sugar and 5g of flour for 1 hour
mix the oyster sauce, chll bean sauce , chilli sauce sugar , flour,sesame oil
and chilli oil into mixture
scoop the rock melon to form melon balls
place the slice cucumber into two circles on the plate for presentation
poach the lobster meat and jumbp prawn in hot oil (about 80 gegree celsius) for
20 second
saute the jumbo prawns with 5g salt , 5g sugar and the carrot slices. mix the
flour with some water and add to prawns to thicken
saute the lobster meat with the minced chilli and garlic together with the mixtire
to serve, place the sauteed jumbo prawns and lobster meat into the two
cucumber circle
place melon balls around the prawns
place the lobster head for presentation
