escalope de saumon a spinach
Ingredient   for 3 people
salmon filette      3 pieces
sauce : 
shallots               2
mushroom           8
white wine        100cc
fish stock         200cc
fresh cream      100cc
butter                30g
Spinach               3 stalks
1.to make sauce:
  put butter into a pan to melt
  add sliced shallots & mushrooms then saute.
2.after cooking, pour in wine to reduce and add stock.
3.meanwhile boil a few stalks of spinach and drain
  cut into 2-inche lengths.
4.add cream to No. 2 and strain.
5.saute filet of salmon.
6.put sauce on the plate, sprinkle on spanich and put salmon on top-then serve.
