Beef steak & Caramelized potato
5oog fillet of well-matured beef,trimmed
salt and freshly ground pepper
1 tsp ground nut oil
1 tsp unsalted butter

for marinade:
600ml hermitage wine, or full-bodied red wine
1 small celery stalk, diced
1 carrot, pee;ed and diced
1 medium onion,peeled and diced
1 juniper burry, crushed
8-10 black pepper corn crushed
1 spring of thyme
1/2 bay leaf

for sauce
500g bones from the best end of saddle, chopped into small pieces
100ml groundnut oil
1 tbs plain flour
50ml red wine vinegar
100ml port
100ml game or brown chicken stock
200ml water
1 level tsp cornflour or arrowroot diluted in 2 tbs of water
2 tbs whipping cream
