PINEAPPLE BARS
2/3 cup shortening
2 1/2 cups flour
1 1/2 tsp. soda
1 cup light brown sugar (packed)
1/2 tsp. salt
1 1/2c. quick cooking oatmeal
1 cup crushed pineapple
Put all ingredients into mixing bowl except the oatmeal and pineapple.  Stir completely and add oatmeal working it in until crumbly.  Press 1/2 mixture into a 7x11-inch pan.  Spread crushed pineapple over top and press the remaining oatmeal mixture evenly.  Bake at 375 degrees for 25 minutes.  Cut into 12 bars.  Lift out while still warm.
