| AUNT PAM'S BUTTERMILK BANANA CAKE (can also be made as muffins) |

| 3 med. bananas, ripe 1 tsp. baking soda 1 1/2 cup sugar 1/2 cup oleo/margarine 2 eggs 1/2 cup buttermilk 3 cups flour 1 tsp. baking powder 1/2 tsp. salt 1 cup chopped walnuts |

| Mash bananas; add baking soda and mix; set aside. In mixing bowl, cream oleo/margarine with sugar; add eggs and buttermilk; mix until well blended. Add dry ingredients (flour, baking powder, & salt). Combine and mix well. Add chopped waluts and banana mixture. Stir until well blended. Pour into greased and floured cake pans. Let batter rest for 20 minutes before putting into oven. Bake at 350 degrees for 50-60 minutes (check for doneness with toothpick after 45 min.) MUFFINS: Pour batter into muffin tins that have been lined with paper cups. Makes 24 muffins. Bake at 375 degrees for 18-20 minutes. Test for doneness |
