| Easy and quick to make. Lovely soft texture. Very tender and good-flavored. They're a Betty Crocker favorite! (Serve them for lunch and supper, too.) | |||||||||||||
| 1 egg 1 cup thick sour cream (25% butter fat) 1 Tbsp. melted shortening 2 Tbsp. sugar 1 1/3 cups sifted GOLD MEDAL "Kitchen-tested" Enriched FLOUR 1/2 tsp. salt 1/2 tsp. baking soda 1 tsp. baking powder |
Beat egg until light. Blend in the cream, melted shortening and sugar. Mix well. Sift flour, salt, soda, and baking powder together and add to the creamed mixture...stirring to completely blend the ingredients. Beat a few strokes. Pour into well greased muffin pan (filling each cup two-thirds full). Bake immediately for 20 to 25 minutes in a moderately hot oven (400 degrees). Recipe makes 12 medium-sized muffins.
