CORNBREAD RING
1 cup flour
2 Tbsp. sugar
3 tsp. baking powder
1/2 tsp. salt
1 cup cornmeal
1 egg beaten (0r 1/4 cup egg substitute)
1/4 cup salad oil (canola) or melted shortening
1 cup milk
Grease 5 1/2 cup ring mold well.  (can use cooking spray but spread with fingers sparingly) Set aside.
In large mixing bowl, combine flour, sugar, baking powder, salt and cornmeal. Mix and set aside.
In separate small bowl, mix egg, oil and milk.  Makine a well in the bowl of dry ingredients, pour in the liquid mixture.  Stir until dry mixture is moist (do not beat-may have small lumps).  Spoon batter into ring mold and spread evenly.  Bake in oven at 425 degrees for
20-25 minutes (until golden brown on top).  Check for doneness with toothpick.  Remove from oven and  run spatula around edge of pan.  Let pan cool and then place on serving dish and slice.
